Program Plan
The Expanded Food and Nutrition Education Program (EFNEP) is a federally funded program to State agencies. In Washington, Food $ense is the EFNEP funded program that provides education and skills based classes to improve nutrition quality of life in lower income families.
Last year, EFNEP programs like Food $ense have helped families save over 1.3 million dollars in total while increasing fruit and vegetable intake and improving the overall diet. Since 1969, EFNEP has focused on improving their program to provide the best services to their customers while enuring long term benefits are sustained.

Food $ense and EFNEP
In Washington, EFNEP provides funding to Washington State University. Food $ense classes are scheduled and provided by the extension office, available in every county. WSU Extension of King County initiates Food $ense by an initial needs assessment from which the length and number of classes is decided. The average is 6-8 classes.
Classes are provided on site at Acres of Diamonds, and are scheduled according to the availability of the residents and staff. Food $ense classes are directed towards helping adults and children in developing healthy eating habits and skills for long term success. In combination is SNAP-ed, a program designed to maximize the usage of SNAP benefits for nutritional value and price. Saving money, improving diet, and increasing cooking and shopping skills make this program worth its weight in gold.

Getting Started
The Acres of Diamonds Cookbook is available for download and print immediately. If printed in black and white at Staples, the book costs approximately $26.00. The cookbook contains over 300 cheap, kid friendly recipes directly from USDA and Food $ense program sites. The recipes were selected for their low cost, family friendly flavors and ease of preparation. Simply click on the button below to begin download*!

In addition to providing recipes, the "Diamonds in the Kitchen" program involves enrollment into the WSU extension office's Food $ense program. Following completion of the classes, survey's will be given to all the residents assessing class value, skills improvement, and overall satisfaction in dietary choices following Food $ense and use of the recipe book. These survey's will be provided via classroom discussions or paper survey's provided by the Program Coordinators Sara or Nichole.
